more muffins!

I promise this won’t become a food blog, or worse, a muffin blog, but I’m on a muffin kick and these Sweet Potato, Rosemary and Sesame seed muffins are worth blogging about!! Another delicious muffin from The Muffin Book. Get the Recipe:
Sweet Potato, Rosemary, and Sesame muffins. 8 oz sweet potato, peeled an cubed (i used 1 large sweet potato, mighta been a yam, not sure!), 2 cups self-rising flour, 1 tsp baking powder, 1/2 cup shredded cheddar cheese, 1 TBSp chopped fresh rosemary (i love rosemary, i used about 2 TBSp), 1 egg lightly beaten, 1 cup buttermilk, 1/4 cup butter, 2 TBSp sesame seeds for sprinkling.
Preheat oven to 400degrees. Get muffin cups ready, greased or lined. Have i mentioned the silicone muffin cups? They rock!
Steam or microwave the sweet potato untill tender when pierced with a fork. Cool, then mash.
In a large mixing bowl, sift together the flour and baking powder (note to self, not sure if i need one, but I kinda want to get a sifter!) Stir through the cheese and rosemary. Make a well at the center.
In a small mixing bowl, combine the egg, buttermilk, butter, and sweet potato. Add all at once to the flour mixture and stir until just moistened (the batter should be lumpy)
Spoon batter into muffin cups, filling them two-thirds full. (the recipe calls for 12, my mixture made 16) Sprinkle with the sesame seeds. Bake until golden brown and cooked through, 15-20 minutes. Cool in pan for 5 minutes. Serve warm, or transfer to rack to cool.
16 muffins = approx 123 calories per muffin.
I’m loving your food posts. I have to come back and get the recipes, especially the spinach and feta one. They all look delicious. Very cool. Nothing wrong with a muffin blog, btw.

Muffins are fun, as are the silicone muffin cups!! Maybe I could be like Julie and Julia and bake my way through the Muffin book! Up next, Carrot and Pesto, Mmmmm, looks good! So far Ive just done savory muffins, but the sweet ones look just as tasty (if not more so!)
I’m going to buy silicone cups ( for the muffins, not myself ) and make these ASAP. They read yummy and photograph yummy.
Less waste and SO easy to peel! In fact, the muffins just come right out! When I get on to the cupcake portion of the muffin book, I’ll ice them AFTER i remove them from the cup so I won’t feel so compelled to eat the frosting lidded wrapper like I usually do. Life doesn’t get much better than that…. well, unless you count my first (of many??) assignment(s) for the Boston Globe!!
