cooking through the csa: the first meal

First day with the CSA. The strawberry rhubarb vinaigrette with red leaf lettuce and sliced strawberries complimented the steak tips beautifully. And the fresh strawberries on top of the ice cream was pretty tasty too! Sadly, i still have 8 stalks of rhubarb to use. Pie, anyone?

Now i need to figure out how to cook some of this stuff. Lettuces, strawberries, beets and cilantro i can handle easily. Challenges: Kale and Rhubarb.

Black bean, roasted corn, and avocado salad on a bed of red quinoa. -From the box of Organic Red Quinoa from Trader Joe’s.

I substituted baby heirloom tomatoes for the grape tomatoes, because they looked better. The cilantro dressing really makes this dish tasty.

The first kayak of the season was delightful, the G7 performed brilliantly in its underwater housing and the frogs posed nicely for their close ups on Collins Pond in Harold Parker State Park. See it a little bigger at The Photo Week.

This week features a boating adventure out to see the whales in the Stellwagen Bank National Marine Sanctuary. The trips are different every time, but they are always sensational.
