I substituted baby heirloom tomatoes for the grape tomatoes, because they looked better. The cilantro dressing really makes this dish tasty.

Carrot and Pesto muffins with an Arugula salad topped with artichoke hearts, sundried tomatos, spanish olives, roasted peppers, almonds, and pepperoncinis (my faves!) tossed in a whole grain mustard vinaigrette. And for all of you concerned with my calorie intake, (thank you) a coffee, heath, and banana milk shake with a joe-joe topper rounds out this delicious dinner.

Homemade pizza with herbed crust, topped wtih red sauce, pesto, artichoke hearts, sun dried tomatoes, roasted red peppers, kalamata olives, shredded mozzarella, and grated parmesan with arugula side salad topped with a whole grain mustard vinaigrette washed down with a Red Tail Ale. Doh! It was so tasty, i forgot to take the photo of the prepared plate! Oh yeah….. it was that good!
MmmmMMmmmmm…. I still haven’t gotten the crust quite as i like it (especially the parts under the toppings), id like it more crispy and less soggy, but there are so many delicious flavors in this pie, the toaster heated leftovers are gonna be delicious!

what’s for dinner?
“What’s for dinner” is a new segment on 2FramesPerSecond featuring some of our fun forays in the kitchen. Tonight: Sautéed Snapper with Orange-Fennel Salad from the Jan/Feb 2010 Cooking Light Magazine. I paired the fish with green beans and quinoa and washed it down with a Kirkland (Costco) German Lager. Delish!
