Black bean, roasted corn, and avocado salad on a bed of red quinoa. -From the box of Organic Red Quinoa from Trader Joe’s.

I substituted baby heirloom tomatoes for the grape tomatoes, because they looked better. The cilantro dressing really makes this dish tasty.
Photo Week: Chocolate Chip Cookies

A few months ago a friend of mine gave me a bottle of vodka and some vanilla beans to make my own vanilla extract. The concoction has spent the last three months in darkness with occasional agitation and this week I decided it was ready and done and broke it out for a batch of chocolate chip cookies! She swore to me that my extract would make the cookies noticeably better, and she’s right, they were UBER-tasty….and already gone! Check out the photo week archives.

And for all of you concerned with my calorie intake, (thank you) a coffee, heath, and banana milk shake with a joe-joe topper rounds out this delicious dinner.

Working my way through the “savory” section of the Muffin Book, and looking forward to “sweet” Today i whipped up a batch of these Carrot Pesto. I’m most pleased that I was able to substitute pear sauce for the vegetable oil. Why i had pear sauce and no apple sauce or vegetable oil I’ll blame on Trader Joes, but it worked! Here’s the tasty recipe….Carrot muffins with pesto. Read more

MmmmMMmmmmm…. I still haven’t gotten the crust quite as i like it (especially the parts under the toppings), id like it more crispy and less soggy, but there are so many delicious flavors in this pie, the toaster heated leftovers are gonna be delicious!
